ScrapFest 2012 was amazing!!! I had soo much fun with my mil Debbie, sil Vanessa, and cousin Brooke :D It was the greatest day ever!!! We got to do some shopping(next year bring more money better start saving for it :p, see alot of brands/companies, make make and takes, and meet some amazing ppl(Tim Holtz, Kellie from Lawn Fawn, and Cathy from Smashaholics ;)!!! Can't wait for next year!!! I would love to do some workshops and be there for the 3 days :D It was a blast!!! Here is where ScrapFest was at the Mall of America love this place :D

Archivers ScrapFest 2012

Tonight we are on our way to the cities with my sister in law Vanessa!! My mother in law Deb, Vanessa, cousin Brooke, and i are going to ScrapFest tomorrow!!! I can't wait to see it!! We are going to be going to the Mall of America where I love to go shopping at when I can get down there :D It is gonna be soo much I have never been to ScrapFest before so I am soo excited!!!!!!!!!! Creamy Chicken and Wild Rice Soup

Tonight for Dinner we are having...Creamy Chicken and Wild Rice Soup :D Since the hubby is out of town hehe :D Can't wait!!!

Creamy Chicken & Wild Rice Soup yield: 6 Ingredients: 2 tablespoons butter 2 tablespoons olive oil 1 cup onion, diced 4 ribs celery, chopped 4 large carrots, peeled and cubed 6 cups good quality chicken broth 3/4 lbs. chicken breasts, cubed 1-6 oz. box Uncle Ben’s Long Grain & Wild Rice 1 1/2 cups half and half (I used fat free) 1/3 cup all purpose flour plenty of salt and pepper Directions: In large pot, heat butter and olive oil. Sautee onions, celery and carrots on medium low heat for 10 minutes to soften. Season vegetables with salt and pepper. Pour in chicken broth and cubed raw chicken. Raise temperature to medium high heat to poach chicken in cooking liquid. Once chicken has cooked and become opaque, pour in rice and seasoning packet that came with the rice. Cover and reduce heat to simmer lightly for 20 minutes, stirring occasionally. In small bowl, whisk cold half and half with flour until smooth. Pour into soup pot and reduce heat completely to low. Cook 10 minutes or until rice is softened completely and soup has thickened slightly. Taste and season accordingly. Serve hot.

Total Heart Attack Mac & Cheese

For Dinner Tonight I am making.... Total Heart Attack Mac & Cheese :D Total Heart Attack Mac & Cheese Make 1lb Macaroni like box says Pre Heat Oven @ 375 2 pkgs Shredded Cheese 1 Small Container Ricotta Cheese 1 Stick Butter 1/2 Small Container Sour Cream 2 Eggs 2/3 C. Milk Parmesan Cheese In a large deep sauce pan, melt butter, mix in milk...and whisk in ricotta chhese, eggs, and sour cream...makes a nice thickish white sauce After cooking the macaroni rinse and mix with shredded cheese(leave a little cheese for the top) Put Macaroni adn cheese mix in 9x13 pan, pour white sauce over top, and mix it up Add leftover cheese and sprinkle on the Parmesan Cheese Bake covered for 30 min then uncovered till top is browned
